Shears can be used to obtain wool from sheep, leaves from trees and for quickly destroying wool blocks.

To use, simply make the Shears your active item and either right-click the sheep or left-click the leaves.

If a sheep is killed, it will only drop 1 block of wool, so shearing is definitely the way to go.

Shears can also be used to destroy webs, which yields string.
